Sevenhill Cellars Estate Grown Inigo Clare Valley Cabernet Sauvignon 2021

Cabernet Sauvignon is Clare Valley’s premier red variety. Fruit for the Inigo Cabernet Sauvignon was sourced from three estate-grown vineyards with an average vine age of 20 years. Each vineyard’s high elevation contributes to cooler nights during the ripening period, giving the fruit more time to develop great depth of flavour. Concentrated flavours of blackberries, blueberries, dark chocolate, cedar box and cinnamon course across the palate. Sevenhill is still owned by the Jesuits who planted the first grapes in Clare in 1851. “A refined Clare Valley Cabernet capturing the mild vintage conditions perfectly. Loaded with ripe blackberry and dark plum aromas laced with a little dark chocolate. There are traces of dried herbs adding further character.
