The Wine
An exuberant, super-fresh white from Chile's remote Elqui Valley, next door to the Atacama Desert, with brilliant Double Gold. Brisk nights ensure the fabulous crispness of Don Aldo, which combines Pedro Ximénez and Chardonnay in this intensely aromatic, mineral-zipped white. As a variety best known for making superb, sweet, fortified wines, Pedro Ximénez shows its class here as an aromatic, dry white. A splash of Chardonnay brings bright peach fruit to the fresh, citrusy minerality for an exciting, refreshing drop.
